Peoplebehind Bistrot Neuf Rex Neve studied oenology in Bordeaux. In 1987 he was the youngest Dutch vinologist and one of the first Dutch wine masters. Since 1991 founder/owner of the wine trade Chabrol Wines. In the same year of the opening of Bistrot Neuf, he opened a second Chabrol in 2009 on the Amsterdam Overtoom. After more than 21 years, Chabrol is still a leader in its industry. With a nose for top quality, unbridled passion, and the necessary bravado, Rex imports grappa, cognac and of course wine and transfers his knowledge with love to his colleagues in Bistrot Neuf.
Robert Peppelenbo s co-founded Bistrot Neuf in 2009. In addition, he is co-owner of restaurant Nobo and (catering) company CulinairExpert, where he helps companies set up the total food concept at a strategic, structural and operational level.
Chef Pascal Tooms is the king of our classic kitchen and he has been behind the French pans for 25 years. Quality and continuity is what he strives for and is committed to every day. Together with his Sous chef Tom Buysse, he ensures a stable, motivated kitchen brigade at a high level.
