The Carstens concept was conceived by chef Maik Kuijpers. Maik Kuijpers cooked the stars from heaven for 14 years as a chef at the Librije. With Carstens, Maik creates a city brasserie in the heart of Amsterdam and makes the connection between city life and products from farming areas and fishing. A menu that moves with the four seasons. A place where you go back to the country for a while in the city. And you remember what that tastes like. The daily management is in the hands of Timo van der Stad and chef Sander Bierenbroodspot.
