Miguel was born and raised in Madrid but has lived all over the world, from Lyon, Berlin, Innsbruck in the Austrian Alps, to Wuhan in China and Pekanbaru on the island of Sumatra. In 2004, he moved to Amsterdam, after falling in love with a Dutch girl. With a master’s degree in Economics, he worked over the next decade to establish a career in Corporate Marketing, which ultimately wasn’t for him. In 2014, at the age of 34, he made the decision to pursue his dream of becoming a restaurateur. Having grown up in a family where the daily celebration of food was a constant, this was a drastic but natural choice. His first job in the industry was peeling langoustines in the three Michelin star restaurant De Librije in Zwolle. A year and a half later, he was made Chef at Hugo’s Bar & Kitchen in Amsterdam, where he met Florian. It wasn’t long before they realized a shared passion for food, drink and hospitality.
Florian is an Amsterdam native with more than 18 years of experience in hospitality, which took him from Austria, London, Dubai, Shanghai, back home to Amsterdam. During the early stages of his career, he quickly developed a passion for bartending. After numerous years of bartending in some of the city’s finest establishments, he won Best Bartender in Holland in 2011. Florian completed his studies at Hotel School The Hague. For his final internship, he went to Shanghai and took on the role of Pre-opening Beverage manager in one of the biggest Marriott hotels in Asia-Pacific. After managing a hotel bar and pre-opening two restaurants as an operational manager in Amsterdam, Florian took a leap and became an entrepreneur. Hugo’s Bar & Kitchen officially opened in November 2013 and was a success from day one. In 2014, spearheaded by Florian, Hugo’s won Best New Cocktail Bar in Holland.
Less than two years later, PIKOTEO opened its doors. Miguel and Florian have put all their love and energy to create something different, but above all else, something fun.
